As I promised you all in my previous post, I’m about to bring you all easy and creative healthy recipes for us, busy mums on the go. Today we have another recipe from the amazing entrepreneur mother, Irene Arango, founder of the raw vegan restaurant of Notting Hill, Nama Foods. She’s preparing this for her lovely baby daughter, Ariana, admitting she’s also offering herself the same energy booster treat.
Chia seeds are very versatile and we love using them in our food. From crackers to porridges & jams, chia are just amazing for adding texture & some crunch into your creations. Kids love them and they are packed with protein and omegas. They are a staple in our breakfast and we share this together.
This is a super simple and tasty recipe that can be used as a template replacing the fruits for others of your choice.
Ingredients (makes 2 servings)
2 cups almond milk, coconut milk, hemp milk or other milk of your choice.
3 tablespoons chia seeds
1/4 tsp vanilla powder
2 medium bananas (can be replaced for a big handfull of cashews)
1 tablespoon coconut sugar, a few dates or other sweetener of your choice
Instructions
Soak the chia in 1 cup of your preferred milk overnight. When you mix the chia seeds with the milk make sure you stir continuosly for a couple of minutes to avoid the chia sticking together. It will become jelly like and that is completely fine. You can keep the mixture in the fridge for a couple of days, so you can actually make this for a few days at the time to make the prep faster.
In the morning, place the rest of the ingredients into a blender and process well. Then add the soaked chia and blend a bit until incorporated but retaining the chia texture.
Serve sprinkled with hemp seeds, cacao nibs, chopped fresh fruit, dried fruits or anything else your kids enjoy. Very easy and delicious!
